Mashed Potato Pancakes with Scallions and Cheddar

LeftI don’t know about you, but I tend to make large quantities of mashed potatoes.  I really like the leftovers and they freeze like a dream.  Can freezing be dreamy?  Sometimes I find the need to go beyond just reheating my mashers and crave a new way to consume the leftovers…enter mashed potato pancakes.

Mashed Potato Pancakes with Scallions and Cheddar

Equipment

  • griddle
  • non-stick pan

Ingredients

  • 2 cups mashed potatoes
  • 1 large egg
  • ½ cup scallions, light green and green parts sliced from about 3 scallions
  • ½ cup cheddar cheese
  • butter for frying

Instructions

  • Mix mashed potatoes, egg, scallions and cheddar together.
  • Preheat a non-stick skillet or griddle to medium heat. Once heated, grease cooking surface with a thin layer of butter.
  • With a spoon or scoop, dollop the potato mixture onto the cooking surface. You'll want a little less than a quarter cup per pancake. Shape into a round disc. Fry for about 5-7 minutes per side, or when pancake is easy to flip.
  • Once done enjoy as is or serve with your favorite hot sauce or ketchup.

Notes

This recipe only calls for one egg, I found that using more caused the mixture to be more runny and resulted in thinner pancakes.  If you prefer thinner pancakes then feel free to add an extra egg!
Taste your mashed potatoes before mixing with egg, decide if you want to add additional salt or pepper.  For very thick mashed potatoes you could also add some sour cream.
