½cupscallions, light green and green parts slicedfrom about 3 scallions
½cupcheddar cheese
butterfor frying
Instructions
Mix mashed potatoes, egg, scallions and cheddar together.
Preheat a non-stick skillet or griddle to medium heat. Once heated, grease cooking surface with a thin layer of butter.
With a spoon or scoop, dollop the potato mixture onto the cooking surface. You'll want a little less than a quarter cup per pancake. Shape into a round disc. Fry for about 5-7 minutes per side, or when pancake is easy to flip.
Once done enjoy as is or serve with your favorite hot sauce or ketchup.
Notes
This recipe only calls for one egg, I found that using more caused the mixture to be more runny and resulted in thinner pancakes. If you prefer thinner pancakes then feel free to add an extra egg!Taste your mashed potatoes before mixing with egg, decide if you want to add additional salt or pepper. For very thick mashed potatoes you could also add some sour cream.
